2 eggs
1/2 cup light brown sugar
1/2 cup vegetable oil
1/2 cup mango juice or puree
1 tsp vanilla
2 cups Gold Medalâ„¢ All Purpose Flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp freshly ground nutmeg
1/2 tsp ground cinnamon
1/2 tsp salt
1 mango, peeled, seeded and diced
1/2 cup macadamia nuts, chopped
1/2 cup plus 2 Tbs unsweetened coconut flakes, divided
Directions
  1. Heat oven to 350° F. Line a 12-cup muffin pan with paper liners. 
  2. In a bowl, whisk together the eggs, brown sugar, oil, juice and vanilla. 
  3. In a large bowl, whisk together the flour, baking powder, baking soda, nutmeg, cinnamon and salt. Make a well in the middle of the flour mixture. Add the egg mixture, and stir until just combined. 
  4. Fold in the diced mango, nuts and 1/2 cup coconut. Spoon the batter into muffin cups. Sprinkle the tops with extra coconut flakes. 
  5. Bake until a toothpick inserted into the middle of the muffins comes out clean, about 25 to 30 minutes.
